Peppermint and Orange Creams

1 egg white
Juice of ½ a lemon
425g icing sugar
175g dark chocolate
½ tsp peppermint flavouring
½ tsp orange flavouring
Food colouring
Quantity: 20-40 depending on size
Oven Temperature: N/A
Cooking Time: N/A
Setting Time: 1-2 hours chilling
Method:
1. Whisk egg white to stiff peaks in a bowl
2. Continue to whist when adding the lemon juice and icing sugar to a stiff paste
3. Split the mixture in half and add the flavourings to each half. Add some green colouring to the peppermint so you can tell the difference. Kneed till the colour and flavouring is thoroughly mixed in
4. Dust a worktop with icing sugar and roll the mixture out thinly
5. Using any cutters, the kids will enjoy this, cut out shapes and place on baking tray. Either chill in the fridge or leave to one side to firm up
6. Melt dark chocolate and use to decorate the creams either by dipping completely, dipping half in or using a piping bag with a small hole to drizzle over the top. The choice is yours
7. Leave to set on a baking tray
Tip:
If letting the kids play, be careful how much icing sugar is on the worktop. You need enough to stop it sticking and keep moving the mixture as you roll. Too much icing sugar being added will result in minty dust!
