Rock Cakes

200g Self raising flour
60g butter
60g sugar
100g dried fruit
25g chopped mixed peel
¼ tsp group nutmeg
1 egg
6 tbsp milk
Demerara sugar
Quantity: 12
Oven Temperature: 180c
Cooking Time: 15-20 minutes
Setting Time: N/A
1. Sift flour into a bowl and rub in butter till the mixture looks like breadcrumbs
2. Add the sugar, fruit and nutmeg to the bowl
3. Beat the egg with the milk and slowly add to the bowl combining the ingredients until the mixture is stiff, not too sticky and leaves the side of the bowl clean. You may not need all of the egg/ milk miture
4. Divide the mixture into 12 and place on a non-stick or lined tray. Rough the top with a fork and sprinkle with demerara sugar
5. Bake for 15-20 minutes till golden and cool on a wire rack
