Shrewsbury Biscuits

150g butter
150g caster sugar
Few drops of vanilla essence
300g plain flour
1 egg

Quantity: Approximately 12 depending on size
Oven Temperature: 180c
Cooking Time: 12-15 minutes
Setting Time: N/A
Method:
1. Cream the butter, sugar and vanilla essence in a bowl
2. Sift in the flour and mix with a little egg to bring the mixture into a dough
3. Tip the dough out onto the worktop and knead till the dough comes together. It shouldn’t need any more liquid but if the dough is hard then add a little more of the egg or some milk
4. Roll the dough out to about ½ cm thickness and cut the shapes desired with cutters
5. Place the shapes on an ungreased tray and bake until just golden. They shouldn’t be too dark
6. Leave to cool for 5 minutes on the tray before transferring to cool completely on a wire rack

Serve with either pasta or roast potatoes and vegetables
