Spicy Cottage Pie

1kg swede, peeled and chopped

Salt and black pepper

Low calorie cooking spray

1 red onion, finely chopped

2 garlic cloves, finely chopped

2 large carrots, peeled and finely chopped

250g mushrooms, thinly sliced

1 leek, thinly sliced

500g lean beef mince (5% fat or less)

400g tin chopped tomatoes

1 vegetable stock cube combined with 1tbsp hot water

1 ½ tsp ground cumin

1 ½ tsp mild chilli powder

Oven Temperature: 200c

Cooking Time: 15 mins on hob and 35 mins oven

  1. Cook the swede in lightly salted boiling water until tender, then drain and mash until roughly mashed. Season well
  2. In a large frying pan, heat the cooking spray until hot. Add the onion, garlic, carrot and leek and cook for 5 minutes. Add the mince and mushrooms and cook for a further 5 minutes.
  3. Add the tomatoes, stock and spices to the pan and stir well. Bring to the boil and remove from the heat
  4. Preheat the oven before turning the mince mixture into an ovenproof dish and then spread the mashed swede over the top
  5. Bake for 35 minutes until the top is golden and bubbling


Serve with peas or other green vegetables. This is a recipe adapted from Slimming World with the addition of leeks, mushrooms and spices. Most yummy and I think syn-free still.
